There are two types of Melrose Organic Safflower oil:
· Oleic (Melrose Organic Cooking Oil); and
· Linoleic (Melrose Organic Salad Oil).
The Linoleic (poly-unsaturated) acid content in Melrose Safflower salad oil is the highest Linoleic acid content of any of the commonly used vegetable oils. The Linoleic acid component totals over 75% and is commonly used in edible oil products such as salad oils and margarine. Linoleic safflower is high in omega 6's (an essential fatty acid) and is reported to have cholesterol reducing and cardiovascular benefiting properties.

The oil is then bottled under nitrogen and packed in amber bottles to reduce both photon and auto-oxidation preserving both the nutritional value and the fresh taste.
