Pumpkin & Brazil Relish
Ingredients
2 tbs Melrose high oleic Safflower Cooking Oil
2 onions finely chopped
750g grated pumpkin
2 tbs grated ginger
2 diced mangoes
1 cup Melrose Apple Cider Vinegar
½ cup Melrose Apple Juice Concentrate
2 tsp nutmeg
1 cup Melrose Brazil Nut & Linseed Spread
Method

Heat oil in a large pan
-
Add onion and cook over al low heat for 5 minutes

Add the pumpkin, ginger, mango and continue cooking for 10 minutes

Add apple cider vinegar, apple juice concentrate & nutmeg and stir

Simmer for 45 minutes until pumpkin is tender

Mix in the Melrose Brazil Nut & Linseed spread

Spoon into sterilised jars and seal while hot

Serve with cheese and crackers
