Sweet Orange Muffins
Tasty Orange Muffins
These muffins are one of Geoff's favourites and are really quick to make and are very tasty
1 orange (about 200g)
¾ cup sugar
1 large egg
½ cup milk or orange juice
⅓ cup Melrose OmegaCare Spread
1½ cups Organic Self-Raising Flour
½ cup sultanas
Optional - add a tablespoon or so of poppy seeds with the flour for crunch and flavour
Method
Preheat the oven to 200°C and grease the muffin pans.
Cut the unpeeled orange into quarters, put these pieces and sugar into a food processor and process with the metal chopping blade until the orange is finely chopped.
In a large bowl whisk the egg, add Melrose OmegaCare and stir well. Add the orange/sugar mix then the milk (or orange juice for dairy free).
Sift the flour and add to the wet mix and sprinkle on the sultanas.
Then taking care not to over mix, fold the mixtures together, stopping as soon as the flour is dampened, but before the mixture is smooth.
Spoon the mixture into the prepared pans.
Bake at 200°C for 15-20 minutes or until tops are golden brown. Cool in tins for 3 minutes and then lift out carefully.
Serve warm. Makes 12 medium sized muffins.
