Quick and Hearty Vegetable Soup
Quick and Hearty Vegetable Soup by Rosemary Dunn, Four Leaf Milling
Ingredients
1 Cup of Four Leaf Organic Soup Mix
1 Finely chopped onion
1 Generous tablespoon of Melrose Organic Olive Oil
1 Litre stock
1 Cup of diced seasonal vegetables; celery, carrots and parsnip
Salt and pepper to taste
Sprig of Parsley for garnish
Method
In a saucepan saute 1 chopped onion with oil until clear but not browned. Add 1 litre of stock and 1 cup of Four Leaf soup mix, bring to boil then simmer with lid on for 20 minutes. Add 1 cup of diced celery, carrots and parsnip or any seasonal vegetables, season with salt & pepper to taste and simmer for a further 15 minutes. Enjoy!
Optional: Add a tablespoon of pasta with the vegetables
for a thicker soup, and a garnish with a sprig of finely chopped Parsley
before serving
Soup is so easy; I usually just "throw" things in.
