Flaxseed and Carrot Muffins

Flaxseed and Carrot Muffins

Ingredients

3 eggs

1/2 cup Melrose Apple Juice Concentrate

1/2 cup Melrose Sunflower cooking oil

1 cup plain yoghurt

1 cup grated carrot

1/2 cup sultanas

3 cups Four Leaf Self Raising Flour

1/2 teaspoon baking soda

1/2 cup Melrose Flaxseeds

1 teaspoon cinnamon

Method

  1. Preheat the oven to 200C and prepare the muffin pans.
  2. Thoroughly beat the eggs, apple juice concentrate, sunflower cooking oil and yoghurt.
  3. Mix in the grated carrot and sultanas.
  4. Fold in the mixed dried ingredients.
  5. Spoon into muffin tins and bake for 20 - 25 minutes.
  6. Makes 12 muffins.
