Flaxseed and Carrot Muffins
Ingredients
3 eggs
1/2 cup Melrose Apple Juice Concentrate
1/2 cup Melrose Sunflower cooking oil
1 cup plain yoghurt
1 cup grated carrot
1/2 cup sultanas
3 cups Four Leaf Self Raising Flour
1/2 teaspoon baking soda
1/2 cup Melrose Flaxseeds
1 teaspoon cinnamon
Method
- Preheat the oven to 200C and prepare the muffin pans.
- Thoroughly beat the eggs, apple juice concentrate, sunflower cooking oil and yoghurt.
- Mix in the grated carrot and sultanas.
- Fold in the mixed dried ingredients.
- Spoon into muffin tins and bake for 20 - 25 minutes.
- Makes 12 muffins.
