Cashew Crinkles
Ingredients
125gm Melrose Organic Omega Gold Spread
¼ cup castor sugar
¼ cup brown sugar - lightly packed
⅓ cup Melrose 100% Cashew Spread
½ tsp vanilla
½ tsp grated lemon rind
1 ¼ cups plain flour
1 tsp bicarbonate of soda
pinch of salt
Method

Cream Melrose Omega Gold Spread and sugars together.

Add Melrose 100% Cashew Spread, vanilla and lemon rind.

Sift flour, soda and salt

With a wooden spoon, gradually add dry ingredients to creamed mixture, making a stiff dough.

Roll teaspoonfuls into small balls, place on greased oven trays.

Press biscuit down lightly with a fork for a crinkled effect.

Bake in a moderate oven 190° for 15 minutes.
Makes approximately 25.
