Apple & Brazil Muffins
Ingredients
1½ cups Four Leaf self raising flour
1 cup Four Leaf soy flour
1 tsp cinnamon
¼ cup Melrose Brazil Nut & Linseed Spread
2 green cooking apples (peeled & grated)
⅓ cup Melrose high oleic Safflower cooking oil
¾ cup Melrose Apple Juice Concentrate
¼ cup honey
3 eggs

Method
- Preheat oven to 180 °, grease muffin tray
- Sift the SR flour, soy flour and cinnamon into a bowl
- Add the grated apple and Melrose Brazil Nut & Linseed Spread
- Into a jug combine honey, safflower oil, Melrose Apple Juice Concentrate & eggs
- Pour wet mixture into the bowl of flours, apple & brazil spread, stir until combined
- Spoon into muffin tray, top with a whole brazil nut
- Bake in a moderate oven 20-25 minutes or until golden
- When cooked remove from tray & cool on a wire rack
